Ingredients:

  • 1 Tablespoon oil
  • 5 cloves of garlic, crushed and diced
  • 1 small onion, diced
  • 1 Tablespoon ground cumin
  • ½ teaspoon ground chili
  • ½ teaspoon cinnamon
  • 1 can black beans, drained
  • 1 can kidney beans, drained
  • 2 cans tomatoes
  • Dash of ground black pepper
  • Grated cheese – optional
  • 1-2 slices of jalapeno peppers – optional
  • Fresh coriander – cut into small pieces – optional
  • Avocado – optional

Method:

  1. In a large frying pan, heat the oil over medium heat.
  2. Add the garlic, onion, and spices.
  3. Stir until the onions soften – this will take a few minutes.
  4. Rinse and drain the beans and add to the pan.
  5. Add the canned tomatoes and season with pepper.
  6. Simmer for 10 minutes or until the mixture has thickened and some of the tomato juice has evaporated.
  7. Stir through some jalapenos if you want some extra spice!
  8. Serve with a handful (40g serving size) of corn chips and cheese/sliced avocado/coriander (optional)
